The Consortium of producers of Traditional Balsamic Vinegar is the guardian of product specification where all products must comply with density and acidity values indicated in the production regulations, and attest to specific tests carried out in laboratories compliant with the ISO/IEC 17025 standard. The Aging process occurs inside the barrels of successively smaller size of different kind of a woods, such as Juniper, mulbury, chestnut, oak and ash.
