Picual is the most important olive variety in the world and is the most widely cultivated variety in Spain. Olive oil produced from Picual olives has a fruity flavor with hints of almond and an aroma of apple. Compared to the Chilean or Spanish Picual, the Peruvian Picual is milder in flavor and consistency.

FLAVOR PROFILE:
Mild aromas of apple and ripe tomato characterize our Peruvian example of Coratina extra virgin olive oil. Creamy and buttery in consistency, it features a fruit forward, and has nutty flavors with hints of almond. It finishes with a fresh tart and peppery finish.

PAIRING SUGGESTIONS:

When paired with our Cranberry Orange or Grapefruit White Balsamic vinegars, it makes an excellent dressing for bitter lettuce salads (radicchio, arugula, endive) with feta cheese, heirloom tomatoes and artichoke hearts. Our Peruvian Picual is also wonderful when used as a finishing oil over summer soups or gazpacho. For a versatile combination for bread dipping, pair with our Traditional or Fig Balsamic vinegars.
