The Noccellara del Belice are the most famous of Sicily's olives. Also known as Castel Vetrano, this Sicilian table varietal olive is prized for its consistency in olive oil and production of delicate brine-cured table olives.
Castelvetrano is a town on the western end of the island of Sicily in the province of Trapani. It is in a valley formed by the Belice River (the "Velle del Belice") which flows approximately 50 miles southwest. FLAVOR PROFILE:
Our Noccellara Early Harvest extra virgin olive oil is an authentic delight, picked early to accentuate the prized lush fruitiness. It has a hearty consistency and a sweet, olive aroma. Its flavor includes notes of artichoke, banana, and ripe fruit, and finishes with a very mild peppery sensation. PAIRING SUGGESTIONS:
As a salad oil, this Noccellara will please even the most discriminating of palates. It is excellent for bread-dipping and will add a delightful flavor to your sauces. Rub your pizza crusts with it before they go in the oven, or drizzle it over chicken or fish. You may find it especially pleasant paired with our Traditional Balsamic vinegars when dipping bread, or blended with one of our Wine or Sherry vinegars and herbs and spices for the kind of vinaigrette you might be served at the neighborhood Italian restaurant.
