Though rarely used for preserving, the Cobrancosa olive is an ideal varietal for producing olive oil. Estate grown and crushed within four hours of picking, our Cobrancosa was produced from the fruit of very young trees. It took more than 24 tons of olives to produce only four tons of oil.
This extremely fresh artisan oil is a fine example of the Cobrancosa variety. Its delicate fruit aromas and creamy smooth consistency create an elegant and refined experience for the palate.
FLAVOR PROFILE:
Our exquisite Cobrancosa features a light, fruity aroma with hints of fresh grass, and has a complex flavor profile. Creamy and smooth in consistency with a pleasant lingering finish, this extra virgin will delight many palates!
PAIRING SUGGESTIONS:
This Cobrancosa complements our Pear and Black Currant balsamic vinegars as a dressing for salads, or for dipping with artisan breads. Its smooth consistency, coupled with its fresh aroma and flavor profile, makes it ideal as a finishing oil for drizzling on seafood or pasta.
