Our Capricci Pasta is hand-made with Certified Organic durum wheat by the Marella factory. The artisans there invented this non-traditional, frilly shape, and it has since become a favorite among chefs worldwide. Pasta made by the Marella factory is some of the best we know-- they use the highest quality, local and organic grain varieties, and the pasta swells up to a large size while cooking.
Because of its frilly shape, we love our Capricci Pasta with any kind of tomato sauce; the curves and swirls of the pasta capture chunks of the sauce! We especially love it with our Arrabbiata Sauce for a spicy kick. Of course, a simple drizzle of some of our extra virgin olive oil, a sprinkling of Parmigiano-Reggiano cheese and some fresh basil is another great way to enjoy this beautiful and delicious Capricci Pasta.

Capricci Pasta with anchovies
Ingredients for 4 people | Preparation 35 Min
500 GM Capricci Pasta | 60 GM Desalted Anchovies ground in a mortar | 2 Clove of Garlic |
400 GM Tomato Pulp | 2 Fresh Chili | 2 TBS Chopped Parsley | 4 TBS of our Coratina Extra Virgin Olive Oil |
Heat the oil in a large skillet over a medium heat, add the whole garlic clove and the chili, and cook slowly until they begin to color.
Remove the garlic. Add the ground anchovies, and straight after, the tomato pulp, Cook for about 8 minutes and season with salt to taste.
Cook the pasta in salted water, Drain it when al dente. Coat with prepared sauce, add the chopped parsley, toss and serve.
