PAIRING SUGGESTIONS: We love to show off when we serve our guests with this flavorful pasta, so we love to serve them simply with our Itrana extra virgin olive oil, perhaps a sprinkling of Parmigiano-Reggiano. Our premium white truffle oil for finish is a perfect fit here; Pair well with shrimp, Lobster or Scallpos along with some chopped basil leaves and cracked black pepper is all else that is needed.
Recipe: Inspired by Accademia Barilla Ingredients for 4 People 500GM Linguine Pasta with summer truffle | 100ML Itrana EVOO | 3oz or 80 GM Fresh Black Truffle | 2 cloves of garlic | 2 salted fillet Anchovy | 12 leaves fresh basil | Salt Preparation : Clean the truffle by brushing it carefully. Slice it using the special tool, and cut up half of the slivers obtained with a knife. Place the pan onto al low heat with half of the oil, adding the cut pieces of truffle and 4 leaves of basil, turn up by hand. Put another medium-sized skillet onto a low heat with the remaining oil, adding the garlic in its skin ((unpeeled). Combine with the desalted chopped anchovy, broken up in the oil. Remove the garlic. Cook the pasta in lightly salted boiling water and drain when al dente. Dress the pasta with the anchovy sauce and the truffle crushed in its oil, the rest of the basil, and the reserved truffle slivers, few drop of our truffle oil. Serve at once.
