"Rooster crests" are normally fresh home made pasta that is shaped into two crescent moons with fingers, stuffed, and served with a tomato and meat sauce. These durum wheat organic crests pasta are ideal for holding any sauce, even the creamier preparations.

Italian Creste di Gallo with braised fennel, carrots and spring onion
Ingredients: for 4 People
500 GM Creste Di Gallo | 300 GM Fennel | 100 GM Carrots | 200GM Spring Onion | 3 Cloves of Garlic | Salt
100 GM Grated Parmigiano | 2 TBS Fresh Fennel Leaves | 400 ML of our Peranzana Extra Virgin Olive Oil |
Cut the fennel bulbs in half, then into thin slices. Scrape the carrot and cut into rounds about in 3mm thick.
Chop the garlic. Slice the onions into strips about 1cm wide.
Heat the oil in a large skillet on a medium heat and add the garlic, fennel and carrots.
Cook the ingredients, covered, for about 10-12 minutes over a medium heat.
Season with salt and black pepper, stirring from time to time. Add the onion to the mixture and cook for a further 5 minutes.
Cook the pasta in large pan of lightly salted water boiling water. Drain when al dente and dress with the sauce.
As a final touch, Sprinkle the over the chopped fennel leaves and the parmigiano.
