Description
Made from red or white wine, wine vinegar is the most commonly used vinegar in Mediterranean countries and central Europe. As with wine, better quality wine vinegars are matured in wood for up to twenty years and exhibit complex, mellow flavors. Wine vinegar usually has lower acidity than white or cider vinegars. Some of the more premium wine vinegars are made from wine varieties such as champagne, sherry or pinot grigio. To create our Italian Zinfandel Wine Vinegar, Zinfandel grapes are hand-pressed and sent to ferment in stainless steel. After reaching the desired alcoholic level, the wine is transferred to old oak barrels to undergo the conversion from alcohol to acetic acid. The final product is vinegar, which then continues to mature in the oak barrels--a process that can take up to three years.
Zinfandel grapes typically produce a robust red wine. The taste of the wine depends on the ripeness of the grapes from which it is made. Red berry fruits like raspberry predominate in wines from cooler areas, whereas blackberry, anise and pepper notes are more common in wines made in warmer areas.

Our Zinfandel Wine Vinegar presents notes of smoky spice and cherry, reminiscent of the blackberry and pepper notes associated with Zinfandels grown in warm climates. It is the perfect paring with rich foods. Drizzle it over sliced avocado with a dash of sea salt and fresh ground pepper for a simple salad, or mix it with our Italian Aprutino or Peruvian Picual extra virgin olive oils and fresh dill to make the perfect vinaigrette for a Greek salad.
