Description
Classic Pizzoccheri come from the Valtellina area of northern Italy, among the high peaks of the central Alps. High in protein and fiber, this delicious treat is a healthy alternative to more traditional durum wheat pasta, as it contains buckwheat as well as durum wheat. With a shape similar to that of a tagliatelle or linguine, our Pizzoccheri can be used in many kinds of dishes and with virtually any kind of sauce, making it a healthy choice when cooking pasta.
PAIRING SUGGESTIONS:
The traditional recipe for Pizzoccheri calls for boiling cabbage and potatoes in water that you add the pasta to; drain and serve hot with Fontina cheese, fried butter and garlic, and a sprinkle of pepper. A drizzle of our Organic Crushed Sage extra virgin adds great flavor and aroma here as well. Of course, you can use the Pizzoccheri just as you would any other long pasta-- in tomato sauces, with meat sauces, in cream sauces, or just simply with some of our Italian Coratina extra virgin olive oil and Parmigiano-Reggiano cheese.
