Our premium naturally aged balsamic simply is the best and versatile. Balsamic vinegar is made from the juice of just-harvested white grapes (typically Trebbiano) boiled down to approximately 30% of its original volume to create a concentrate, and it has been made in Modena, Italy, since the Middle Ages. True balsamic vinegar is aged for a minimum of 12 years in wooden barrels. It is rich, glossy, deep brown in color and has a complex flavor that balances the natural sweet and sour elements of the cooked grape juice with hints of wood from the casks. The love and dedication that goes into producing this exquisite example of balsamic vinegar has led to its P.G.I. certification, which stands for Protected Geographical Indication; it is a high honor in the country with some of the world's highest standards for its food products. A P.G.I. certification ensures that the balsamic vinegar is made according to traditional, time-honored methods, using only approved ingredients, and is produced in Modena or Reggio Emilia, Italy. This certification stands for exceptional quality and a deep love for producing only the finest traditional balsamic vinegar in the world.

This balsamic vinegar is more than any other represented in the history of OO&B. It is made exclusively for OO&B from a unique, secret recipe handed down by master crafter and aged for over 12 years in the finest and oldest ash, mulberry, chestnut, juniper and oak wooden casks. Lovingly and skilfully selected raw materials created this precious novelty! Due to it's high density it contains 12g of Sugar or 2.4% Carbohydrate.

Perfect at any time of day and in any occasion, our Signature Reserve 1330 is fantastic for every type of cheese or charcuterie combination, from simple everyday dressing to the most elaborate food preparation. It is richer, thicker and more dense in consistency than any of our balsamic. It is ideal when used raw to flavor or derssed up your greens, as a dip for raw vegetables, or with boiled meats and sauces. It delicately flavors fish and meat; a plain boiled fish flavored with a few drops becomes a refined delight! It also makes a unique accent for fruit salads, ice cream and cheese plates featuring premium aged cheese, figs and walnuts.

I have always loved your balsamic vinegars. But I wanted something that had a thicket consistency and you v came through. Love it.
