Made from red or white wine, wine vinegar is the most commonly used vinegar in Mediterranean countries and central Europe. As with wine, better quality wine vinegars are matured in wood for up to twenty years and exhibit complex, mellow flavors. Wine vinegar usually has lower acidity than white or cider vinegars. Some of the more premium wine vinegars are made from wine varieties such as champagne, sherry or pinot grigio. To create our Italian Prosecco Wine Vinegar, the grapes are hand-pressed and sent to ferment in stainless steel. After reaching the desired alcoholic level, the wine is transferred to old oak barrels to undergo the conversion from alcohol to acetic acid. The final product is vinegar, which then continues to mature in the oak barrels--a process that can take up to three years.
Prosecco is an Italian sparkling wine that is produced mainly in the north of Italy. Our Prosecco Wine Vinegar retains many of the characteristics of the sparkling wine, including notes of apple, pear, peach and apricot. Just as Prosecco is a light and refreshing sparkling wine, our Prosecco Wine Vinegar is light and tart as well.

Pair it with our Italian Tonda Iblea or Moraiolo classic extra virgin olive oils for a crisp, tart and refreshing vinaigrette; whisk in Dijon mustard, shallots and herbs for a delicious marinade for grilled chicken. For a unique dressing, pair it with our Wild Portobello Mushroom & Sage extra virgin; the earthy, herbal flavors of the oil paired with the tart vinegar will take any dressing or marinade to the "Wow!" level!
