HIGH QUALITY CANNELLINI BEANS,
Cannellini Beans are large white beans, about 1/2" long, with a firm texture and skin and a nut-like flavor. Very popular in Italy, and especially Tuscany, cannellini beans are the reason Tuscans are referred to as "bean eaters," or "Mangiafagioli" in Italian. Cannellini beans are mild in flavor and hold their shape well. A variety of the "common bean," cannellini are related to kidney beans, great northern, navy, and green beans, among others. As such they share the common bean's many health benefits: they are low in fat and high in protein, fiber, minerals and B vitamins.

PAIRING SUGGESTIONS:
Before cooking, soak the Cannellini Beans overnight in cold water. For a typical Tuscan meal, boil them in a pot the next day in their water, together with 1 lb of canned tomatoes, two cloves of garlic, 1/2 lb of pork, some sage, olive oil, salt, and pepper. Bring to a boil, simmer until done, and serve with a drizzle of our Organic Crushed Sage extra virgin olive oil as a finish. Of course, our Cannellini Beans also are wonderful in salads-- simply boil them and let them cool. Add tuna, capers, thinly-sliced red onion and halved cherry tomatoes, toss with some of our Italian Dolce Cerasoula extra virgin olive oil, Barrel-Aged Red Wine vinegar, a dash of lemon juice, salt and pepper. Let sit for 30 minutes to let the flavors combine, and spoon atop a bed of arugula-- delizioso!
