There is a movement in Italy to restrict the title of "pesto" only to products from Liguria, where Genova is the capital. Basil grown along the steep coastline in this part of northern Italy is sweet, and when mixed with the buttery and delicate Ligurian extra virgin olive oil, pine nuts, walnuts, garlic and Grana Padano cheese, the result is an exquisitely well-balanced pesto that many say is "the best pesto I've ever had!"
PAIRING SUGGESTIONS: There are so many uses for our Pesto alla Genovese. It is ideal with pasta from Liguria, such as our Trofie or Croxetti.
